Wit Cellars Offers a Variety of Beautifully Crafted Wines That Deserve to be on Your Must-Try List

Wit Cellars, with tasting rooms in Prosser and Woodinville, Washington has a number of current releases that are certain to please. Here are several recommendations for you to consider:

Wit Cellars 2019 “Unleashed” Sparkling Pinot Grigio – Delicate floral aromatics, gentle lead-off fruit flavors of apricot and apple, and notes of minerality and field grasses fill the glass. The finish is highlighted with bracing acidity and crisp citrus, making it a perfect pairing partner for anything from fried chicken to sushi to caviar and sour cream on toast points. It’s a versatile sparkler that shouldn’t be limited to special occasions, and a great alternative to much pricier Champagnes.
Mazzacano Cellars 2017 Cabernet Franc – This incredible wine opens with aromas of wild berries, black currant, and vanilla wafer, with savory qualities of fresh herbs, white pepper, and gamey meats on the palate. The finish displays compact, dried cherry fruit with a seamless transition into nicely integrated tannins. This is a beautifully crafted, picture-perfect, varietally correct Cab Franc that lovers of the grape dream about.
Wit Cellars 2017 Syrah – This fruit-forward Syrah, co-fermented with a splash of Viognier, explodes with aromas and flavors of blackberry, blueberry, fig, and spiced black plum. The brambly fruit components melt into a finish with accents of warm baking spices that complement the wine’s luxurious, sexy mouthfeel. Flat-out delicious and instantly enjoyable, and the promise of added complexity and maturity with additional cellaring time will be worth waiting for.
Wit Cellars 2017 Cabernet Sauvignon, Painted Hills Vineyard – Lively and expressive, a bouquet of fresh cherries and eucalyptus immediately pops out, followed by a savory, umami note. Red fruits dominate the flavor profile and are capped with a pleasant sprinkling of Chinese five spice. There’s more of an elegant air to this wine than Cabernet’s oftentimes bigger and bolder qualities, and the near-silky finish simply adds to this wine’s persona.
Wit Cellars 2019 Chardonnay – Perfectly balanced and terrior driven, this wine has the Ancient Lakes AVA written all over it with a lovely, fresh quality and underlying notes of minerality. Starfruit, quince, and Asian pear come to the forefront, with a hint of lemon citrus on the finish. This all-around delicious Chardonnay pairs nicely with cheeses such as sharp cheddar and feta, which bring out the wine’s juicier Fuji apple flavors.
Wit Cellars 2017 Petit Verdot – Spicy, brambly berry aromas and flavors lead off and then melt into mellower, ripe Marion berry fruit. The slightly chewy finish carries a nice texture along with a note of dense black plum, chocolate, and freshly brewed coffee. Bring on the beef or perhaps consider serving it with something a little more gamey such as venison, bison or wild duck.
Wit Cellars 2018 Cabernet Sauvignon, Elephant Mountain Vineyards – This newly-released Cab opens with luscious, fresh fruit flavors of blackberry, raspberry, and red plum that transition into a layered, lingering finish that suggests anise, molasses, and dark caramel. The standout first impression is how harmonious the fruit, acidity, and tannin components come together, resulting in a wine with impeccable balance and character.
